Texas Caviar


4 to 6 Roma Tomatoes
1 Red Pepper
1 Yellow Pepper
1 Green Pepper
1 White Onion
2 cans Shoe Peg corn
2 cans Black-eyed peas
1 Tablespoon Garlic Salt
Dash of Pepper
1/2 bottle of Wishbone Italian dressing (don’t use low-fat, tastes different)


1. Chop up all ingredients and mix in a container. Add the garlic salt, pepper and Italian dressing, mix well, and marinate in the fridge for a few hours or over night. The longer it soaks the better. Serve with tortilla chips.

2. This recipe is completely to taste. You can add more peppers or less of something depending on preference. Same with the brand of Italian dressing and the amount. I just make it with Wishbone.
