Taco Soup


1 lb ground beef/turkey
2 15 oz. cans black beans (drained & rinsed)
1 can corn (1 1/2 cup frozen)
1 14.5 oz can diced tomatoes
1 to 3 tsp taco seasoning
1 16oz salsa
Tortillas, cheddar cheese, Sour cream


1. In a soup kettle, brown the meat and drain off any fat. Add black beans, corn and tomatoes with juice, taco seasoning and salsa. Water may be added to make it a little soupier as desired. Cook over medium-low heat for 20-30 minutes. Serve with garnishes of your choice.
