Ingredients:
- 4 English cucumbers, seeds scooped out, and chopped
- 10 oz grape tomatoes, chopped
- 1 small red onion, diced
- 1 small green pepper, diced
- 1 small red pepper, diced
- 6 oz high-quality black olives, chopped
- 8 oz all natural fresh mozzarella balls(optional, omit for dairy-free)
- 4 oz nitrate free pepperoni slices
- Fresh basil leaves , about 1/4 cup chopped
Dressing Ingredients:
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine, or apple cider vinegar
- 2 Tbsp fresh squeezed lemon juice
- 2 tsp dried Italian seasoning
- 1/2 tsp garlic powder
- 1/2 sp sea salt
- Fresh ground black pepper to taste {Whisk dressing, taste, adjust to personal preferences}
Instructions:
- Combine all Salad ingredients gently
- pour dressing over salad, & gently combine.
- Cover, place in refrigerator for 1 hour before serving.
